Summer on a Plate
This is a quick an easy salad that is always a hit and is super tasty, and very fresh with the mint, lime, peach and Asian flavours. Is always a winner with the family and the kids can pick the vegies out that they like to eat. Guests always love this one and it is always the first bowl to be empty!
Is very simple so is easy for me to just whip up and throw some steaks on the bbq and there you have a very easy summer dinner. Love it!
Cooking time: 4 minutes
Ingredients
- 3 Carrots (peeled and cut into chunks)
- 2 handfulls Green beans (topped and tailed)
- 1/2 Capsicum, red (sliced into batons)
- 1 Lebanese cucumber (sliced into batons)
- Handful Bean sprouts
- 2 Peachesor Nectarines, ripe (peeled and sliced into wedges)
- Mint, fresh
- Coriander, fresh
- 1 tbs Sweet chilli sauce
- 1/2 Lime, juiced
- 6 drips Fish sauce
- 1/2 tsp Sesame oil

Preparation Steps
- 1 Microwave (or steam) carrots and green beans on high for 4 minutes, they should still be bright colourful and with a slight crunch (may need a bit less time depending on your microwave)
- 2 In a jar place the Sweet chilli sauce, lime juice, fish sauce and sesame oil, shake to mix, set aside
- 3 Place all vegetables (except sprouts) and the fruit in your serving dish, rip the herbs over the top, drizzle with the sauce and then lightly toss, finish with the Bean Sprouts on top.
